Broiled Fish Quenelles
|Skinned fish fillets/All trout / combination of trout, whitefish and pike||2 Pound|
|Chopped onion||1⁄2 Cup (8 tbs)|
|Chopped carrot||1⁄3 Cup (5.33 tbs)|
|Egg||1 , beaten|
|Vegetable oil||2 Teaspoon|
|Salt||1 1⁄2 Teaspoon|
|Matzo meal/White cornmeal||1 1⁄2 Teaspoon|
|Ice water||3 Tablespoon|
Place all ingredients except 1 tablespoon of the ice water and watercress in a blender or food processor; puree until the consistency of a paste.
Add remaining ice water if necessary (mixture should hold together and be easy to handle).
Form fish mixture into oval patties, using 1/2 cup for each.
Place on a lightly oiled cookie sheet.
Broil 4 inches from heat until patties are well browned and slightly puffed (8 to 10 minutes on each side).
Garnish with watercress.
