Broiled Fish Quenelles

Ingredients
  Skinned fish fillets/All trout / combination of trout, whitefish and pike 2 Pound
  Chopped onion 1⁄2 Cup (8 tbs)
  Chopped carrot 1⁄3 Cup (5.33 tbs)
  Egg 1 , beaten
  Vegetable oil 2 Teaspoon
  Salt 1 1⁄2 Teaspoon
  Matzo meal/White cornmeal 1 1⁄2 Teaspoon
  Ice water 3 Tablespoon
  Watercress 1
Directions

Place all ingredients except 1 tablespoon of the ice water and watercress in a blender or food processor; puree until the consistency of a paste.
Add remaining ice water if necessary (mixture should hold together and be easy to handle).
Form fish mixture into oval patties, using 1/2 cup for each.
Place on a lightly oiled cookie sheet.
Broil 4 inches from heat until patties are well browned and slightly puffed (8 to 10 minutes on each side).
Serve immediately.
Garnish with watercress.
