Whole Baked Schnapper

This recipe for the whole baked schnapper is simple and savory. The schnapper is stuffed with breadcrumbs, chopped apricots and shallots along with cheese, eggs and parsley. The head and tail covered with a foil to prevent burning or over cooking, the whole schnapper is roasted whole and can be served with a side of choice. Adapted from Sharp Microwave and Convection Cookbook.
Ingredients
  Whole schnapper 500 Gram, cleaned
  Whole meal breadcrumbs 2⁄3 Cup (10.67 tbs)
  Chopped apricots 1⁄4 Cup (4 tbs)
  Shallots 2 Small, finely chopped
  Grated cheese 1⁄4 Cup (4 tbs)
  Chopped parsley 2 Teaspoon
  Egg 1 , beaten
Directions

1.
Preheat oven to 180°C.

Combine breadcrumbs, apricots, shallots, cheese, parsley and egg together.
Mix well, 3.
Fill cavity of schnapper with bread stuffing.
4.
Shield head and tail of schnapper with foil.
Place directly on Low Rack; cook for 15-20 minutes on LOW MIX/BAKE 180°C Turn over halfway through cooking.
