Tuna And Zucchini Melts
|Canned tuna in water||9 1⁄4 Ounce, drained (1 Can)|
|Nonfat mayonnaise||1⁄2 Cup (8 tbs)|
|Chopped celery||1⁄4 Cup (4 tbs)|
|Shredded zucchini||1⁄4 Cup (4 tbs)|
|Green onions||2 Small, thinly sliced|
|Prepared mustard||1 Teaspoon|
|Shredded reduced fat cheddar cheese||1 Ounce (1/4 Cup)|
|English muffins||4 , split and toasted|
In a medium bowl, stir together the tuna, mayonnaise, celery, zucchini, onion, and mustard until well combined.
Then stir in the cheese.
Spread about 1/4 cup of the tuna mixture on each English muffin half.
Then place the muffins on the rack in a broiling pan.
Broil 3" to 4" from the heat about 4 minutes or until the tuna mixture is heated through.
Then top each with a tomato slice and broil for 1 to 2 minutes more or until the tomatoes are heated through.
Chef's Note: It's easy to toast all of the English muffin halves at the same time.
Arrange them on the rack in a broiling pan and broil for a few minutes, until lightly brown.
