Orange Roughy Primavera
|Fresh rosemary||1 Tablespoon, minced|
|Fresh thyme||1 Tablespoon, minced|
|Black pepper||1 Tablespoon, coarsely ground|
|Olive oil||1 Tablespoon|
|Orange roughy fillets||4|
|Non fat cooking spray||1|
Coat the grill with cooking spray and preheat for 5 minutes.
Thinly slice the zucchini, red pepper, onion and carrot.
In a small bowl, combine the rosemary thyme, pepper and oil.
Place the vegetables in the grill and drizzle one half of the herb oil over them.
Grill for 5 minutes.
Move the vegetables to the sides of the grill and add the fillets.
Drizzle the remaining herb oil over the fillets.
Grill for 4-6 minutes, or until the fish flakes easily and the vegetables are tender.
To serve, carefully remove the fillets from the grill and top with the vegetables.
