Fish Gumbo

Fish gumbo is a cooked fish preparation in a soup like gravy. Cooked in a microwave, the fish gumbo has a shrimp and tomato soup base and has fish fillets along with vegetables like celery and tomatoes. Flavored with bay leaf and white wine, the fish gumbo is quite a flavorful dish.
Ingredients
  Margarine/Butter 2 Tablespoon
  Sliced green onions 1⁄3 Cup (5.33 tbs)
  Chopped celery 1⁄2 Cup (8 tbs)
  Condensed tomato soup 10 3⁄4 Ounce
  Condensed cream of shrimp soup 10 3⁄4 Ounce
  Stewed tomatoes 14 1⁄2 Ounce
  Sliced okra 14 1⁄2 Ounce
  Dry white wine 1 Tablespoon
  Bay leaf 1
  Fish fillets 1 Pound, cut into 1 inch pieces
Directions

Place margarine, onions and celery in 3 quart casserole.
Cover and microwave until vegeta bles are tender, 3 to 4 minutes.
Mix in soups, canned vegetables (with liquid), wine and bay leaf.
Cover and microwave to boiling, 8 to 10 minutes.
Stir in fish.
Cover and microwave 4 minutes; stir.cover and microwave until fish flakes easily with a fork, 2 to 3 minutes.
