Fish Florentine

Ingredients
  Frozen chopped spinach 1 Can (10 oz)
  Grated parmesan cheese 1⁄4 Cup (4 tbs), divided
  Low fat yogurt 1⁄4 Cup (4 tbs)
  Egg yolk 1
  Onion 1 Small, finley diced
  Lemon juice 2 Teaspoon
  Salt 1⁄8 Teaspoon
  Ground nutmeg 1⁄8 Teaspoon
  Cod fillets 4
Directions

Cook spinach according to package directions, drain well.
Combine spinach, 2 tablespoons Parmesan cheese, yogurt, egg yolk, onion, lemon juice, salt, and nutmeg, mix well.
Line a steaming rack with cheesecloth, arrange fish on cheesecloth.
Place rack in a Dutch oven, cover and steam fish 5 minutes or until fish flakes easily when tested with a fork.
Carefully transfer fish to an ovenproof serving platter.
Spoon spinach mixture evenly over each fillet.
Sprinkle with remaining 2 tablespoons cheese, broil 3 minutes or until the cheese melts.
Garnish with lemon wedges, if desired.
