Deep Fried Fish Or Shallow Fried Fish
|Fish fillets/Steaks / pan-dressed fish||2 Pound|
|Fat||2 Cup (32 tbs) (for deep frying)|
|All purpose flour||1 Cup (16 tbs)|
|Eggs||2 , slightly beaten|
|Dry bread crumbs||1 Cup (16 tbs)|
Heat fat or oil (3 to 4 inches) to 375Â° in deep fat fryer or kettle, if fillets are large, cut into serving pieces.
Stir together flour, salt and pepper, coat fish with flour mixture; dip into eggs, then coat with bread crumbs.
Fry in deep fat about 4 minutes or until golden brown.
Or shallow-fry fish in hot shortening (1 1/2 to 2 inches) in skillet about 4 minutes or until brown.
