Peppered Pan Fried Fish

Ingredients
  Fish fillets 2 Pound (Steaks Or Pan-Dressed Fish)
  Salt 1 Teaspoon
  Pepper 1⁄8 Teaspoon
  Egg 1
  Water 1 Tablespoon
  All purpose flour 1 Cup (16 tbs)
  Buttermilk baking mix 10 Ounce
  Cornmeal/Grated parmesan cheese 10 Ounce
  Shortening 1 Cup (16 tbs) (Part Butter)
Directions

If fillets are large, cut into serving pieces.
Season both sides of fish with salt and pepper.
Blend egg and water.
Dip fish into egg, then coat with flour.
Heat shortening (1/8 inch) in skillet.
Turning fish carefully to brown both sides, cook in shortening over medium heat about 10 minutes.
