Apple Baked Mackerel Stuffed With

Ingredients
  Mackerels 2 Pound (Around 4 Pieces)
  Butter 1⁄4 Pound
  Celery 1 Cup (16 tbs), finely chopped
  Apples 1 , peeled and finely chopped
  Onion 1 Small, chopped
  Bread crumbs 1 Cup (16 tbs)
  Chopped parsley 1 Tablespoon
  Ground ginger 1 Pinch
  Lemons 1 , juiced and grated rind
  Salt To Taste
  Pepper To Taste
Directions

1 Preheat the oven to 350°F.
2 Using a sharp knife remove the backbones from the fish without damaging the flesh. Open out the fish to form a pocket for the stuffing, and clean it thoroughly.
3 Make the stuffing. Melt 1/4 cup butter in a saucepan and saute the celery, apple and onion for 4 minutes. Stir in the breadcrumbs and chopped parsley. Season with salt and pepper and add the ginger, grated lemon rind and juice.
4 Spread the filling evenly on each mackerel, and fold over. Melt the remaining butter in a pan and use to brush the mackerel. Wrap them in foil and bake in the oven for 20 minutes.
