|Black pepper||To Taste, freshly ground|
|Melted butter||2 Tablespoon (as required)|
Remove steak from refrigerator and allow to stand at room temperature for 30 minutes.
Slit fat around edge in two or three places to prevent steak curling.
Preheat grill until hot, place steaks on oiled rack and brush lean surface of meat with melted butter or oil.
Grill steaks for 2-3 minutes on each side to seal surface of meat, turning with tongs or two spoons.
Reduce heat and cook for a further 4-6 minutes on each side.
Season steak with salt and pepper before serving.
