Fried Halibut Steaks
|Flour||1⁄2 Cup (8 tbs)|
|Rosemary powder||1⁄8 Teaspoon|
|Garlic powder||1 Dash|
|Butter||1⁄4 Cup (4 tbs)|
Lay the halibut steaks out on waxed paper and squeeze lemon juice over them generously.
Combine flour, salt, pepper, rosemary and garlic powder and dip steaks in mixture to coat both sides.
Heat butter in a large skillet, add the steaks and fry over moderate heat until golden, 5 to 6 minutes.
Turn steaks carefully and fry on second side until golden and fish flakes easily with a fork, 5 to 6 minutes more.
(Add more butter if necessary.) Put on hot platter, garnish with lemon wedges, tomato wedges and parsley and serve immediately.
