Water Poached Fish
Season each slice of fish with a few drops of lemon juice and a dash of pepper.
Place fish slices or steaks one next to the other, as they were before being cut.
Wrap whole fish in a cloth (any white cloth will do).
Pour 2 cups (500 mL) of warm or cold water into a 4-cup (1 L) plastic or glass dish with cover.
Microwave 10 minutes at HIGH.
Uncover, place the wrapped fish in the hot water.
Microwave 3 minutes per pound (500 g) at HIGH.
DO NOT COOK MORE THAN 3 POUNDS (1.5 KG) AT A TIME.
Let stand 5 minutes in water.
Remove and refrigerate or serve with the sauce of your choice.
