Fish Poached In Court-Bouillon

Ingredients
  Water 1 1⁄2 Liter
  Coarse salt 15 Milliliter
  Cider vinegar 125 Milliliter
  Carrot 1 Large
  Parsley sprigs 2
  Bay leaf 1
  Thyme 3 3⁄4 Milliliter
  Whole peppercorns 7 1⁄2 Milliliter
  Onions 2
Directions

Place all the ingredients in an 8-cup (2 L) microwave-safe baking dish.
Microwave at HIGH 15 minutes.
Let stand 15 minutes.
Pass through a sieve, reserving liquid.
Put back liquid in the baking dish.
Add the fish and microwave at HIGH.
Time according to weight and type of fish.
A personal note: The vinegar can be replaced by an equal amount of fresh lemon juice or a small unpeeled lemon, thinly sliced
