Cold Red Mullet A L'Orientale

Ingredients
  Red mullet 4 Small
  Dry white wine 4 Cup (64 tbs)
  Olive oil 3 Tablespoon
  Tomato puree 4 Tablespoon
  Saffron 1 Pinch
  Spices 1 Pinch
  Lemon slices 4
Directions

Put the fish in a frying-pan, pour some oil over them, and turn them.
Cover with white wine, add salt, pepper, saffron, spices (coriander seeds if possible) and the tomato puree.
Let it boil for 1 minute, then poach it without boiling for 10 to 12 minutes.
Leave the fish to get cold in the sauce, and garnish each fish with a thin slice of lemon.
