Lemon Pickled Herring

Ingredients
  Salt herring 12
  Lemons 2
  Onions 6 Large
  Bay leaves 12
  Peppercorns 2 Tablespoon
  Mustard seed 2 Tablespoon
  Vinegar 1 1⁄2 Cup (24 tbs)
Directions

Soak herring in cold water overnight.
Bone herring; cut into pieces.
Alternate layers of herring, lemon, onions, bay leaves, peppercorns and mustard seed in glass jar.
Pour vinegar over top layers.
Place weight on herring mixture to let brine cover mixture.
Re- frigerate for 1 week.
