Batter-Fried Whitefish

Ingredients
  Whitefish 2 Pound
  Fat 2 Cup (32 tbs) (for deep frying)
  Flour 1 Cup (16 tbs)
  Baking powder 2 Teaspoon
  Salt 1 Teaspoon
  Sugar 1 Teaspoon
  Egg 1 , separated
  Melted butter 1 Teaspoon
Directions

Cut whitefish into serving pieces.
Sift flour, baking powder, salt and sugar into bowl; add egg yolk.
Add butter and water to make medium batter; mix well.
Beat egg white until stiff peaks form; fold egg white into batter.
Dip whitefish into batter.
Fry in deep fat at 350 degrees for 6 minutes or until golden brown; drain on absorbent paper.
