Directions

MAKING
1) Rub the trout with some canola oil
2) Stuff the trout with a sprig of tarragon and three lemon slices
3) Place the fish on the hot grill and cook each side for about 2-3minutes
4) Once done place the fish on a plate
5) To make the aioli, in a food processor, add an egg yolk and a little canola oil and blend
6) Slowly pour in the remaining oil till it forms a mayonnaise
7) Add to it the tarragon leaves and some lemon juice

SERVING
8) Serve the grilled fish on a bed of leeks with some aioli sauce
