Baked Stuffed Shad
|Milk||1 Cup (16 tbs)|
|Poultry seasoning||To Taste|
|Salt and pepper||To Taste|
Pour milk over bread in bowl just to moisten.
Add onion, salt, pepper and poultry seasoning.
Stuff shad; sew opening closed.
Lay strips of bacon over shad.
Place in shallow foil-lined pan.
Cover bottom of pan with water; add water as necessary during baking.
Bake at 200 degrees for 4 hours or until fish flakes easily with a fork.
