Sweet And Sour Fish

Ingredients
  Onions 2 , thinly sliced
  Lemons 2 , sliced
  Brown sugar 1⁄3 Cup (5.33 tbs)
  Seedless raisins 1⁄4 Cup (4 tbs)
  Bay leaf 1
  Whitefish slice/Pike / salmon 6
  Kosher salt 2 Teaspoon
  Water 2 Cup (32 tbs)
  Crushed gingersnaps 6
  Cider vinegar 1⁄3 Cup (5.33 tbs)
  Blanched tomatoes 1⁄4 Cup (4 tbs), sliced
Directions

MAKING
1) In a saucepan, mix the onion, lemon slices, brown sugar, raisins, bay leaf, fish, salt and water
2) Cover with the lid and cook the stock on a low heat for 25 minutes
3) Place the fish on to a platter
4) Add in the gingersnaps, vinegar and the sliced almonds to the fish stock
5) Pour this stock over the arranged fish

SERVING
6) Serve the fish warm
