Soused Herrings Or Mackerel

Ingredients
  Herrings/Mackerel 4 Large (or 8 small size)
  Pickling spice 1 1⁄4 Teaspoon (1 good teaspoon)
  Spice blend 1 Teaspoon (sweet)
  Salt 1⁄2 Teaspoon
  Apple 1 Small, sliced
  Onion 1 Small
  Sugar 1 Teaspoon
  Water 1⁄4 Pint
  Vinegar 1⁄4 Pint
  Bay leaves 2
Directions

GETTING READY
1) Split the herrings and take out backbones. Roll them.

MAKING
2) Take a casserole and put herring into it along with the remaining ingredients.
3) Cook the herring at 300 degrees or at gas mark 2 for an hour. Let them cool.

SERVING
4) Serve Soused Herrings Or Mackerel with lettuce, potato and beetroot salads.
