Fish Balls

Ingredients
  Salmon 2 Pound
  Butter 1⁄4 Pound
  Flour 1⁄4 Cup (4 tbs)
  Heavy cream 1⁄4 Cup (4 tbs)
  Oil 1⁄2 Cup (8 tbs) (For Frying)
  Kosher salt 1 Tablespoon
  Pepper 1⁄2 Teaspoon
Directions

MAKING
1) Using a sharp knife, chop the fish finely
2) Sprinkle in salt and pepper
3) In a bowl, lightly cream the butter and flour using a small whisk
4) Add the mixture onto the fish
5) Add in the cream
6) Using the hands, shape the fish into 1 inch balls
7) In a large skillet, pour in the fat and allow to heat
8) Fry the fish balls till golden brown all around

SERVING
9) Serve the fish balls with hollandaise sauce
