Calamari, White Bean, and Red Lentil Ragout

  Dried white beans 4 Ounce, picked over
  Dried red lentils 2 Ounce, picked over
  Onion 1 , peeled and quartered
  Bay leaves 2
  Fresh thyme leaves 2 Teaspoon
  Whole black peppercorns 1 Tablespoon
  Italian flat leaf parsley 1 Bunch (100 gm), leaves chopped, and stems reserved (Reserve 4 Sprigs For Garnish)
  Extra-virgin olive oil 2 Tablespoon
  Garlic 2 Clove (10 gm), peeled and minced
  Dry white wine 1 Cup (16 tbs)
  Homemade vegetable broth/Low-sodium vegetable broth from bouillon cubes 2 Cup (32 tbs)
  Kosher salt To Taste
  Freshly ground black pepper 1⁄4 Teaspoon (Use A Few Grinds)
  Calamari 1 Pound, cleaned, body cut into rounds, and tentacles quartered lengthwise (Small Sized)

1. In a bowl, put the white beans and cover with water, there should be about 2 inches of water
2. In another bowl, put the red lentils and cover it with water the same way, now chill it by refrigerating both bowls for about 8 hours or overnight
3. Take out the bowl with the white beans and drain them in a colander, also discard the soaking water, repeat the same method with the bowl full of lentils, make sure that you keep the beans and lentils separately
4. Rinse both the beans and the lentils under cold running water, but set aside the lentils for now
5. To prepare the ragout, take a medium saucepan, and in it, put the white beans and the onion and add fresh water, make sure that the pan is covered with 2inces of water
6. Take the bay leaves and tie it, half the thyme, the peppercorns, and parsley stems in cheesecloth, take a saucepan, and in it, add all these ingredeints along with the beans, then simmer all of them together and cook over medium heat for about 1 hour and 45 minutes, until they turn tender

7. Serve with a sauce of your choice or with salads
