Indonesian Fish Curry

Ingredients
  Cod fillets/Coley fillets 1 1⁄2 Pound
  Salt To Taste
  Plain flour 2 Tablespoon
  Onion 1 , sliced
  Cooking apple 1 Large, peeled, cored, sliced
  Lemon juice 1 Tablespoon
  Butter 2 Ounce
  Oil 2 Tablespoon
  Curry powder 2 Tablespoon
  Stock 1 Pint
  Sultanas 2 Tablespoon
  Cornflour 2 Tablespoon
  Split almonds 2 Ounce
Directions

MAKING
1) Rinse the fillets. Pat dry on a kitchen towel.
2) Slice the fillets into pieces. Sprinkle salt and dredge in a bowl of flour.
3) Sprinkle lemon juice over the sliced apple.
4) In a casserole, heat the butter and oil. Add in curry powder and saute for 5 minutes.
5) Add in the fillets and let cook well. Add in the apple slices next. Continue to cook for 3 minutes.
6) Add in the stock into the casserole. Next, go in the sultanas.
7) In a small bowl, blend in the cornflour with a little stock or water. Add into the casserole.
8) Let the mixture come to a boil and simmer for 10 to 15 minutes.
9) Add in the almonds and cook for another 2 minutes.

SERVING
10) Serve the Indonesian Fish Curry hot with steamed rice on the side.
