Fish Bonne Femme
|Minced shallot||1 Teaspoon|
|Minced parsley||1 Teaspoon|
|White wine/Vermouth||1⁄3 Cup (5.33 tbs)|
|Butter||1 1⁄2 Tablespoon|
|Fish fillets||1 Pound (Such As Flounder, Sole, Blue, Rock)|
|White pepper||To Taste|
1)Rinse mushrooms and then later slice it.
2)Mince shallot and parsley.
3)In a heavy skillet place mushrooms, shallot, parsley, wine and butter and cover it.
4) Add small fillets of fish in the skillet, placing flesh sides up.
5)Sprinkle with salt and pepper.
6)Simmer 10 to 12 minutes, depending on thickness of fillets, until fish flakes easily with fork.
7)During cooking, spoon some of liquid over the fish once.
8)Serve immediately, as soon as ready.
