Grilled Fish, Vegetable And Rice Packets

Ingredients
  Long grain and wild rice 6 Ounce (1 box, UNCLE BEN'S Brand Original)
  Orange roughy fillets/Tilapia fish fillets 16 Ounce (4 pieces, 4 ounce each)
  Olive oil 3 Tablespoon
  Balsamic vinegar/Fresh lemon juice 3 Tablespoon
  Red bell pepper 2 Medium, cut into thin 2 inch strips
  Thinly sliced zucchini 1 Cup (16 tbs)
  Thinly sliced red onion 1⁄2 Cup (8 tbs)
  Button mushrooms 8 , quartered
Directions

MAKING
1 As per the package directions, prepare the rice.
2 Evenly divide the cooked rice between four 15x 12-inch pieces of heavy-duty foil.
3 Slightly spread out the rice in the center of the foil.
4 Place 1 fish fillet over each portion of rice.
5 Season the fish with salt and pepper.
6 In a medium bowl, gently whisk oil into vinegar until combined.
7 Add in the vegetables, tossing gently until coated.
8 Divide the vegetables evenly over the fish and rice.
9 Drizzle the remaining oil mixture over the fish.
10 Bring the two long sides together above food and fold down in several tight folds, then tightly fold in the short ends to seal.
11 Place the foil packets, seam side up, on the grid over medium coals.
12 Grill, covered, for 15 to 20 minutes or until fish flakes easily when tested with fork.

SERVING
13 Serve hot.
