Kids Fish Fingers

Barry & Phoebe make their own homemade fish fingers.
Ingredients
  Breadcrumbs 1 Cup (16 tbs)
  Oregano 1 Pinch
  Salt and pepper To Taste
  Zest of lemon 1
  Eggs 1 , beaten
  Cod 400 Gram, sliced
  Cooking spray 2 Dash
  Lemon 1 , and divided
  Peas 1⁄4 Cup (4 tbs)
  Spinach 1 Bunch (100 gm)
  Mayonnaise dressing 1⁄4 Cup (4 tbs)
Directions

GETTING READY
1. Preheat the oven to gas mark 6/ 400 degrees F. Grease a baking pan with cooking spray and set aside.

MAKING
2. In a large bowl, mix together bread crumbs, oregano, salt and pepper and lemon zest.
3. Dip the cod into egg and coat with breadcrumbs. Place into the prepared baking pan.
4. Bake in the oven for 20 minutes.
5. Meanwhile in a bowl, mix together mayonnaise and half of lemon juice. Set aside.
6. Place the spinach and peas in microwave and cook for 10 minutes.
7. Take out from the microwave and add in the remaining lemon juice. Stir slowly.

SERVING
8. Serve fish fingers along with peas and spinach and mayo.
