Marinated Kipper Fillets

Ingredients
Kipper Fillets - 8 (350gram)
Mild Olive Oil - 6 fluid ounce (175ml)
Wine Vinegar - 2 fluid ounce (55ml)
Brown Sugar - 1 dessert spoon
Bay leaves - 2
Mustard Powder - 1 heaped teaspoon
Onion - 1 medium, thinly sliced into rings
Coriander Seeds - 2 teaspoons, crushed
Black Pepper freshly ground
Lemon Slices, Watercress and Lettuce Leaves for garnish
Directions

MAKING
1) Using a sharp knife, take the skin off the kipper fillets
2) Into an oval dish, layer the fillet with slices of onion and sprinkling of coriander and ground pepper
3) Tuck the bay leaves randomly into the dish
4) Into a jar with a screw jar top, dissolve the mustard and brown sugar, vinegar, olive oil and shake vigorously
5) Shake vigorously the jar bottle and pour the mixture over the fillets
6) Cover the dish with a lid to double foil sheet and leave to marinate in the refrigerator for 4-5 days

SERVING
7) Onto a flat dish, place a lettuce leaf and place the fish fillet over the leaf garnished with a slice of lemon and serve along with some bread and butter
