Ratouille Topped Salmon Steaks

Ingredients
  Salmon steaks 6
  Vegetable cooking spray 1
  Olive oil 2 Teaspoon
  Garlic 2 Clove (10 gm), minced
  Eggplant 1 Small, cubed
  Red onion 1 , sliced
  Green pepper 1 Medium, seeded, strips
  Tomatoes 2 Medium, seeded, chopped
  Zucchini 1 Medium, sliced
  Dried whole basil 1⁄2 Teaspoon
  Dried whole oregano 1⁄2 Teaspoon
  Dried whole thyme 1⁄2 Teaspoon
  Salt 1⁄8 Teaspoon
  Pepper 1 Dash
  Grated parmesan cheese 3 Tablespoon
Directions

GETTING READY
1) Preheat the oven to 400F.
2) Coat a 13X9X2-inch baking dish with cooking spray.

MAKING
3) Wash the salmon steaks under cold, running water.
4) Arrange the steaks in the baking dish.
5) Spray a large skillet with cooking spray. Heat oil over medium flame. When the oil is hot, add in garlic, eggplant and onion. Saute till they soften. Add in the green pepper, tomatoes, zucchini, basil, oregano, thyme, salt and pepper. Mix well. Take the skillet off the heat.
6) Add the vegetable mixture over the steaks.
7) Bake covered for 20 minutes.
8) Take the skillet off the heat. Sprinkle the bake with parmesan cheese. Bake uncovered for 5 minutes.

SERVING
9) Serve the Salmon Steaks hot, garnished with parsley leaves.
