Fish Fillets creolee
|Frozen fish fillets||16 Ounce|
|Chopped onion||1⁄4 Cup (4 tbs)|
|Canned tomatoes||20 Ounce|
|Chopped parsley||1⁄4 Cup (4 tbs)|
|Lemon juice||3 Tablespoon|
|Cubed fried potatoes||4 Cup (64 tbs)|
Melt butter in a skillet.
Add onions and cook until tender.
Add flour and stir over low heat until browned.
Stir in tomatoes, seasonings and lemon juice.
Cook over moderate heat 10 minutes.
Cover with a circle of buttered white paper or waxed paper with a hole in the center.
Cover pan tightly and simmer 8 to 10 minutes or until fish flakes easily with a fork.
Remove fish to platter, cover with sauce and serve with potatoes.
