Herring Parcels

Ingredients
  Butter 3 Ounce, softened
  Small onion 1 , peeled and finely chopped
  Lemon 1⁄2 (use finely grated rind and juice)
  Prepared mustard 1 Teaspoon
  Freshly chopped parsley 2 Teaspoon
  Salt To Taste
  Freshly ground black pepper To Taste
  Herrings 4 , cleaned and boned, heads removed
Directions

GETTING READY
1.Preheat the oven to 350 degrees or gas mark 4.

MAKING
2.In a bowl, whisk butter until light.
3.Put onion, lemon rind and juice, parsley, mustard, salt and pepper to it and blend well.
4.Put the mixture in herring cavity.
5.Secure each fish by wrapping with a buttered foil.
6.Put the parcels on a baking dish and bake for 20 minutes.
7.Serve immediately or freeze if you like.

SERVING
8.Serve warm, with dips.
9.If using frozen, thaw and reheat before serving.
