Mackerel Salad

Ingredients
  White-wine vinegar 2 Tablespoon
  Dijon mustard 1 Teaspoon
  Garlic 1 Clove (5 gm), minced
  Canola oil 2 Tablespoon
  Minced fresh parsley 1 Tablespoon
  Snipped chives 1 Tablespoon
  Dried tarragon 1⁄4 Teaspoon
  Canned mackerel 15 Ounce, drained and flaked (1 Can)
  Radishes 1 Cup (16 tbs), thinly sliced
  Boston lettuce head 1 , torn into pieces
  Watercress leaves 1 Cup (16 tbs), firmly packed
Directions

MAKING
1) In a large bowl, whisk together the vinegar, mustard and garlic.
2) Slowly whisk in the oil in the vinegar mixture.
3) Stir in the parsley, chives, and tarragon.
4) Add the mackerel and toss gently.
5) Cover and refrigerate for 1 to 2 hours.
6) Add the radishes and toss gently.

SERVING
7) Line a platter with the lettuce and watercress.
8) Place the mackerel salad on the greens.
9) Serve a lemon wedge on side if desired.
