New England Codfish Balls
|Mashed potatoes||2 Cup (32 tbs)|
|Cod fillets/Any white fish fillets||8 Ounce, poached , drained, and flaked to make 1 cup|
|Egg||1 Large, lightly beaten|
|Minced parsley||2 Tablespoon|
|Black pepper||1⁄2 Teaspoon|
|Dry mustard||1⁄2 Teaspoon|
|Worcestershire sauce||1⁄2 Teaspoon|
|Salt||1⁄4 Teaspoon (Or To Taste)|
|Unsalted butter/Margarine||1 Tablespoon|
|Lemon||2 Large, thinly sliced (For Garnish)|
1. In a medium-size bowl, mix the potatoes, cod, egg, parsley, mustard, pepper, Worcestershire, and salt until well blended. Form into four 4-inch round patties, about 1 inch thick.
2. In a 10-inch nonstick skillet, melt the butter over moderately high heat. Cook the fish cakes for 4 minutes on each side or until 'well browned. Garnish with the lemon slices and serve with mint.
