Baked Codfish New Orleans

Ingredients
  Codfish 4 Pound
  Lemon juice 2
  Dry bread crumbs 1 Cup (16 tbs)
  Melted butter 4 Tablespoon
  Parsley 1 Tablespoon, finely chopped
  Chives 1 Teaspoon, minced
  Onion 2 Tablespoon, grated
  Lemon 1 , juiced and grated rind
  Ham 2 Tablespoon, finely chopped
  Thyme 1⁄4 Teaspoon
  Nutmeg 1 Dash
  Stewed tomatoes 2 Cup (32 tbs)
  Parsley 1 Teaspoon, finely chopped
  Mushrooms 1⁄2 Cup (8 tbs), sliced
  Flour 1⁄2 Tablespoon
  Butter 1 1⁄2 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

Rub inside of codfish with lemon juice.
Prepare stuffing: Blend bread crumbs, melted butter, parsley, chives, onion, juice and rind of lemon with ham, thyme, nutmeg, salt and pepper to taste.
Stuff cavity of codfish.
Skewer closed.
Place fish in well-buttered baking dish.
Add tomatoes, parsley and mushrooms.
Bake covered in hot oven 20 minutes.
Remove fish and keep warm.
Stir flour and butter into sauce.
Return fish to baking dish.
Cover.
Bake in moderate oven 20 minutes longer.
