Grilled Herrings With Parsley Butter

Ingredients
  Unsalted butter 1⁄2 Cup (8 tbs)
  Chopped parsley 2 Tablespoon
  Lemon juice 1 Tablespoon
  Herrings 4 , cleaned (Use Fresh Whole)
  Oil 1 Tablespoon
  Lemon 1
  Parsley sprigs 6
  Salt To Taste
  Pepper To Taste
Directions

Mash butter with chopped parsley and lemon juice.
Form into a roll, wrap in wax paper and chill till ready to use.
Preheat a charcoal grill.
Brush herrings with oil and season.
Place on grill and cook for 7 minutes on each side.
Arrange herrings on serving plate.
Garnish with lemon, pats of chilled butter and parsley sprigs.
