Ingredients
  MackerelĀ filletsĀ  3 Pound
  Dried tarragon 1 Teaspoon
  Salt 1 Teaspoon
  Pepper 1⁄4 Teaspoon
  Onion 1⁄2 Cup (8 tbs), diced
  Lemon juice 1⁄4 Cup (4 tbs)
  Melted butter/Margarine 1⁄4 Cup (4 tbs)
  Ketchup 1⁄2 Cup (8 tbs)
Directions

GETTING READY
1) Preheat the oven to 425F

MAKING
2) Using absorbent kitchen towel, wipe the fillets and place them on a greased shallow baking dish
3) Mix together the tarragon, salt and pepper and sprinkle over the fillet
4) Mix the lemon juice, ketchup and dried tarragon and pour over the fillets
5) Bake for 25-30 minutes till the fish can be flaked easily when tested with a fork

SERVING
6) Serve the fish warm
