Orange Roughy Primavera

Ingredients
  Zucchini 1
  Red pepper 1
  Pepper red To Taste
  Onion 1
  Carrot 1
  Rosemary 1 Teaspoon, minced
  Fresh rosemary 1 Teaspoon, minced
  Fresh thyme 1 Teaspoon, minced
  Thyme 1 Teaspoon, minced
  Black pepper 1 Teaspoon
  Coarsely ground black pepper 1 Teaspoon
  Olive oil 1 Teaspoon
  Fillets 6 Ounce
  Orange roughy fillets 24 Ounce (4 Fillets Of 6 Ounce Each)
  Nonfat cooking spray 1
Directions

MAKING
1.Coat grill with cooking spray.
2. Preheat grill for 5 minutes.
3.Make thin slices of onion, carrot, zucchini and re pepper.
4. Take a small bowl and mix together oil, pepper, thyme and rosemary.
5.Pour some herb oil over the vegetables and grill for 5 minutes.
6. Move aside the vegetables and add in the fillets to the grill.
7.Pour remaining herb oil over them.
8.Grill for 4 to 6 minutes until fish flakes easily.

SERVING
9. Serve fillets topped with grilled vegetables.
