Creamed Fish And Pimiento

Ingredients
  Celery stalk 1⁄2 , chopped
  Onion 1⁄2 Small, chopped
  Corn oil 15 Milliliter (1 Tablespoon)
  Whole wheat flour 30 Milliliter (2 Tablespoon)
  Skim milk 375 Milliliter (1 1/2 Cup)
  Fish fillets 1 Pound, cubed (450 Grams)
  Pimiento 30 Milliliter, finely chopped (2 Tablespoon)
Directions

GETTING READY
1. In a large pan,pour in the oil and heat it gently
2. Add the chopped celery and onion and cook till it is translucent
3. Add the whole wheat flour to the pan and continue stirring over low heat till the flour is cooked through.
4. After one or two minutes of cooking, remove the pan from the heat and set aside

MAKING
5. Add milk to the pan and mix well to prevent the flour to lumping
6. Return the pan to medium heat and mix well till the sauce begins to thicken
7. Add the fish and the Pimento to the saucepan. Mix well and cover the pan
8. Set on medium heat and simmer for 10 minutes or till the fish is done

SERVING
9. Serve hot immediately with steamed rice and steamed potatoes and fresh greens
