Pan Fried Fish Fillets

Ingredients
  Milk 1⁄4 Cup (4 tbs)
  Yellow cornmeal 1⁄4 Cup (4 tbs)
  Packaged biscuit mix 1⁄4 Cup (4 tbs)
  All purpose flour 1⁄4 Cup (4 tbs)
  Sesame seeds 1 Tablespoon
  Paprika 1⁄2 Teaspoon
  Celery salt 1⁄2 Teaspoon
  Onion powder 1⁄8 Teaspoon
  Fish fillets 1 Pound (1/2 Inch Thick)
  Vegetable oil 1⁄4 Cup (4 tbs)
Directions

MAKING
1 Into a pie plate, pour milk.
2 In another pie plate, mix together cornmeal, biscuit mix, flour, sesame seeds, paprika, celery salt and onion powder.
3 Dip fish fillets in milk to moisten both sides; drain off excess milk.
4 Dip in cornmeal mixture; coat both sides.
5 Place breaded fish on a rack; set aside.
6 Preheat a 10-inch microwave browning skillet at 100% (HIGH)for 4 minutes.
7 Add oil to the skillet.
8 Using hot pads, tilt skillet so entire surface is coated with oil.
9 Quickly add fish.
10 If fillets have skin, place skin-side up.
11 Microwave on first side at 100% (HIGH)for 1-1/2 minutes.
12 Turn fish over and give dish a half turn.
13 Microwave at 100% (HIGH) for 1-1/2 to 2 minutes or until browned and center of fish is beginning to flake when tested with a fork.

SERVING
14 Serve hot.
