Ingredients
  Salt To Taste
  Pepper To Taste
  Smelts 2 Dozen
  Lemon juice 2 Tablespoon
  Anchovy fillets 2 Dozen
  Melted butter/Margarine 1⁄4 Cup (4 tbs)
  Dry bread crumbs 2 Tablespoon
Directions

GETTING READY
1) Preheat the oven to 375F

MAKING
2) Using a sharp knife, spit the smelts lengthwise and remove the bones
3) Brush each fish with lemon juice and place an anchovy fillet on each smelt and roll
4) Secure the rolls with toothpicks or skewers
5) Place the rolls smelts in a baking dish and drizzle them wine and butter
6) Sprinkle in salt, pepper and breadcrumbs
7) Bake in the oven for 25 minutes till the smelts are tender

SERVING
8) Serve them warm
