Spiced Salmon Steaks

Ingredients
  Light brown sugar 1⁄2 Cup (8 tbs)
  Allspice 1 Tablespoon, ground
  Mustard powder 1 Tablespoon
  Fresh ginger 1 Tablespoon, grated
  Salmon steaks 4 1⁄2 Pound (1-Inch Thick)
  Cucumber 1
  Butter 2 Tablespoon
  Green onions 1 , trimmed and cut into 1-inch pieces
  Lemon juice 1 Tablespoon
  Dill weed 2 Tablespoon, chopped
  Fresh parsley 1 Tablespoon, chopped
  Parsley 1 Tablespoon, chopped
  Freshly ground pepper To Taste
  Salt To Taste
Directions

GETTING READY
1. Season the plank
2. Preheat the plank to 350
3. In a small bowl, mix the sugar and spices together
4. Add the salmon steaks to the mixture
5. Rub the marinate into the fish and set aside for one hour in the refrigerator

MAKING
6. Peel the cucumber and cut into quarters lengthwise
7. Remove the seeds and cut each quarter into 1-inch pieces
8. In a large saucepan, heat the butter
9. Add the chopped cucumber, green onions, lemon juice, dill, parsley, salt and pepper.
10. Cook over medium heat for 10 minutes for until the cucumber is tender and appears translucent
11. Place the salmon steaks into the oval of the preheated plank
12. Bake for 20 to 30 minutes.

SERVING
13. Serve hot immediately with the flavored cucumber and green onions.

TIP
Prepare the vegetables fifteen minutes before putting the salmon for cooking
