Tomato Crown Fish
|Fish fillets||1 1⁄2 Pound|
|Water||1 1⁄2 Cup (24 tbs)|
|Lemon juice||2 Tablespoon|
|Canned tomatoes||2 Large|
|Green pepper||1⁄2 , minced|
|Onion||2 Tablespoon, minced|
|Bread crumbs||1⁄2 Cup (8 tbs)|
1. Preheat oven to 350°F.
2. In mixture of water and lemon juice freshen fish several minutes, place in a greased baking dish, season lightly, spread tomato slices over fillets and sprinkle with green pepper and onion.
3. In bowl mix bread crumbs, oil and basil, sprinkle evenly over the vegetables and bake 10 to 15 minutes.
4. Serve hot with the desired garnish.
