Red Mullet With Anchovies And Orange

Ingredients
  Red mullet 32 Ounce
  Anchovy fillets 12
  Seasoned flour 1 Tablespoon
  Orange juice 4 Fluid Ounce (120 Milliliter)
  Tomato 60 Milliliter, diced (4 Tablespoon)
  Parsley 1 Tablespoon, chopped
  Orange 1 , sectioned
Directions

GETTING READY
1. Cut 4 of the anchovy fillets into quarters
2. Make 2 slashes in each side of the mullet
3. Place a piece of the anchovy into the mullet

MAKING
4. Dip the mullets in the seasoned flour
5. Grill the mullet for five minutes under a very hot grill
6. Place on a serving dish when done
7. In a grill pan, tip in the orange juice, tomato, and rest of the anchovy fillets
8. Heat the grill pan to simmer and then reduce the liquid to a thick sauce
9. Taste and season to taste

FINALIZING
10. Pour the sauce around the mullet just before serving

SERVING
11. Serve hot with the sauce served around the fish
12. Garnish with the parsley and the orange sections
