Cod Or Haddock Steaks Duglere
|Onion||1 Medium, finely chopped|
|Ripe tomatoes||3 , skinned and deseeded|
|Chopped parsley||1 Tablespoon|
|Dry white wine||6 Tablespoon|
|Frozen cod steaks/Haddock steaks||400 Gram|
Melt the butter in a wide saucepan and over low heat fry the onion until soft but uncoloured.
Add the tomatoes, parsley, wine, water and seasoning, and bring to the boil.
Put the haddock steaks into the pan, cover and poach very gently for 15 to 20 minutes.
Cream together the butter and flour.
Remove the cooked fish and arrange on a serving dish.
To the saucepan add the creamed butter and flour in small pieces, whisking continuously, until the sauce thickens.
Check the seasoning then pour over the fish.
Garnish with the parsley and serve with creamy mashed potato.
