Baked Stuffed Mackerel
|Butter||1⁄2 Ounce (15 Gram)|
|Onion||1 Small, finely chopped|
|Cooking apple||1⁄2 Small, peeled|
|White breadcrumbs||1 Ounce (25 Gram)|
|Lemon rind||1 Teaspoon, grated|
|Ground black pepper||To Taste|
|Mackerel||1 , cleaned|
1) In a small pan saute the onion in the melted butter and cook gently until soft; add the apple, breadcrumbs, lemon rind, salt and pepper and blend well.
2) Cut open the mackerel and place the stuffing in the centre, roll the fish; insert the cocktail sticks to secure.
3) In a small ovenproof dish lay the stuffed fish and pour over the water , cover the dish with foil and bake in a preheated oven for 20 min; remove the cocktail sticks.
4) Garnish with sliced lemon and dill sprig and serve immediately.
