Salmon Rice Ring

Ingredients
  Cooked rice 1 Cup (16 tbs)
  Bread crumbs 3⁄4 Cup (12 tbs), buttered
  Eggs 2 , beaten
  Salt 1⁄2 Teaspoon
  Celery salt 1⁄2 Teaspoon
  Pepper 1⁄8 Teaspoon
  Onion 1 Tablespoon, chopped
  Parsley 1 Tablespoon, chopped
  Pimiento 1 Tablespoon, chopped
  Flaked salmon 4 Cup (64 tbs), canned
Directions

1. Combine ingredients in order given and place in buttered ring mold.
2. Bake in moderate oven (350°F.) 30 to 40 minutes.
3. Remove from oven and brush with melted butter.
4. Turn onto serving platter and, if desired, fill center with buttered peas and carrots and garnish ring with tomato wedges.
5. Serve with Lemon Butter Sauce.
