Stir Fried Fish With Vegetables

Ingredients
  Cod fillet 1 Pound, skinned and cut into 1 inch wide strips (450 Gram)
  Salt 1 Teaspoon
  Oil 1 Tablespoon
  Rindless back bacon rashers 2 , shredded
  Frozen peas 2 Ounce, cooked (50 Gram)
  Frozen sweet corn 2 Ounce, cooked (50 Gram)
  Chicken stock/Water 6 Tablespoon
  Dry sherry 2 Teaspoon
  Soy sauce 2 Teaspoon
  Sugar 1 Teaspoon
  Cornflour 1 Teaspoon
  Water 1 Teaspoon
  Spring onion tassels 1⁄4 Cup (4 tbs) (For Garnish)
Directions

GETTING READY
1) Sprinkle salt over the fish fillets and keep aside for 15 minutes.

MAKING
2) In a frying pan or wok, heat oil.
3) Stir-fry fish and bacon for 3 minutes.
4) In the pan, add the remaining ingredients, except cornflour and water.
5) Boil the sauce.
6) Blend cornflour with water and add in the sauce.
7) Cook sauce for 1 minute.

SERVING
8) Serve the fish immediately with passels of spring onion.
