Skate Au Beurre Noir
|Skate wing||1 , cut into large pieces along the line of the ribs|
1. In a frypan heat the oil.
2. Dust the skate with flour and shake off any excess.
3. Lay the pieces into the hot oil and cook, turning once, allowing 8 minutes per 1" of thickness.
4. In a small frypan melt the butter and when it just starts to brown add the vinegar, bring the heat up and add the capers.
5. Serve with the skate.
