Creamed Smoked Whiting
|Boneless smoked whiting||1 1⁄2 Pound|
|Milk||2 Cup (32 tbs)|
|Ground thyme||1 Pinch|
|Butter||1⁄4 Cup (4 tbs)|
|All purpose flour||1⁄4 Cup (4 tbs)|
|Light cream||1⁄4 Cup (4 tbs)|
|Chopped pimiento||1 Tablespoon|
|Hard-cooked eggs||2 , chopped|
Soak fish in milk with bay leaf, thyme, peppercorns, and onion for 1 hour.
Then put over very low heat, and simmer gently for 10 minutes.
Melt butter and blend in flour.
Add strained milk and cream slowly.
Add fish and remaining ingredients.
Makes 4 servings.
