Jazzy Orange Roughy

Ingredients
  Orange roughy fillets 12 Ounce (2 Pieces, 12 Ounce Each, Fresh / Frozen)
  Snipped fresh basil/3/4 teaspoon dried basil, crushed 2 1⁄2 Teaspoon
  Snipped oregano/1/2 teaspoon dried oregano, crushed 1 1⁄2 Teaspoon (Fresh)
  Garlic 1 Clove (5 gm), minced
  Green pepper 1⁄2 , thinly sliced
  Sweet yellow pepper 1⁄2 , thinly sliced
  Sweet red pepper 1⁄2 , thinly sliced
  Onion 1 Small, thinly sliced
  Olive oil 2 Tablespoon
  Slivered almonds 2 Tablespoon, toasted
  Orange wedges/Lemon wedges 4
  Salt To Taste
  Pepper To Taste
Directions

GETTING READY
1. Defrost the fish if frozen.
2. Preheat the oven to 275 degrees.

MAKING
4. Take a low baking dish and arrange fillets in after drying with towel.
5. Sprinkle salt, pepper, basil, oregano and garlic on the fillets.
6. Put the fillets for baking for 45 minutes.
7. In the meantime, take a medium sized skillet, heat olive oil in it and stir in green pepper, yellow pepper, red pepper and onion.
8. Put the pepper mixture on the fillets in the baking dish.
9. Season with almonds and roast the fillets for 3 minutes till they turn brown.

SERVING
10. Serve the fillets hot topped with orange or lemon wedges.
