Captain Ed's Marathon Pan Fried Fish

Ingredients
  Fish fillets 4 (Approximately 1/4 Inch Thick)
  Unseasoned bread crumbs 1 Cup (16 tbs)
  Yellow corn meal 1 Cup (16 tbs)
  Seafood seasoning 1⁄3 Cup (5.33 tbs)
  Eggs 2
  Extra virgin olive oil 1⁄4 Cup (4 tbs)
Directions

Combine bread crumbs, corn meal and seafood seasoning in a bowl.
Coat fish with the mixture.
Beat the eggs in a separate bowl.
Take the coated fillets and dip in the beaten egg.
Coat fillets again in the dry mixture.
Put extra virgin olive oil, approximately 1/8 inch deep into a frying pan and heat over medium heat.
When heated, add fillets and cook approximately 4 to 5 minutes on each side over medium heat until fish is golden brown and flakes easily with a fork.
